The Holiday Bikini – A Recipe

We present a simplified take on a beverage featured on the seasonal cocktail list. Designed as a party-sized premix that's packed with the essence of a Christmas time, rendering it ideal for hosting a holiday party. Reserve the remaining citrus syrup you can use for breakfast cocktails, sweets, or to mix more rounds of bikinis.

Bikini Recipe

Yields 10 servings

For the Clementine Cordial (makes 750ml)

300ml newly squeezed clementine juice
200ml newly squeezed lemon juice
500g granulated sugar

For the Premix (produces 850ml, to serve 10)

400ml premium vodka
100ml classic gin
150ml peach liqueur
200ml citrus syrup (as made above)
Whole cranberries, for garnish
Mandarin essential oil, to finish

Method

To prepare the Citrus Syrup: Place all the ingredients into a pot, heat until it reaches a gentle boil, mixing until the sugar dissolves. After that, take off the heat and leave to cool down entirely. Transfer into a clean bottle, seal and store in the fridge, it can be stored for about four weeks.

To make Batch Mix: Pour all the spirits and syrup into a large bottle, allow it to infuse for one hour, then strain preferably using muslin, making it perfectly clear.

For serving: Measure 85ml of your batch mix into a stirring glass filled with ice, and stir lightly for one minute until cold. Filter to a cold coupe glass or equivalent, top with the cranberries adding the final touch with a brief mist of the essential oil over the drink.
